There is no problem at all to give birth to your baby in China as long as one of the parent need to be Canadian citizen, also one of you have to be in China while you apply for the passport ( canadian) for the baby.
But only apply when you are ready to bring the baby to Canada as they need flight ticket to make sure you are bring her /him back to Canada. The passport is only valid for one year, then wait about 12 more month you should get citizenship for the baby, very simply and fast, take 15 days in Canadian embassy.
